Sensory Features: The wine features a bright and clear golden color, with aromas of zesty citrus, passionfruit, and fresh herbs. On the palate, it is crisp and clean with flavours of grapefruit, lime, and subtle mineral notes. The finish is long and lingering, with a refreshing acidity that balances the wine perfectly.
Grape Variety: 100% Sauvignon Blanc
Soil: Silty-clay loams, some parcels with gravels interspersed.
Hand picked and whole bunch pressing of fruit prior to cold settling then fermentation. 60% of this wine is fermented using indigenous yeasts. The wine is aged for 4 months in stainless steel tanks then bottled without fining.
Grapes are picked from eight of our own vineyards within the Wairau Valley. Cropped at an average of 10 tonnes/hectare. The fruit is whole bunch pressed, cold settled before fermentation and 4 months aging in stainless steel tanks. A portion of this wine is fermented using indigenous yeast. Bottled without fining.
Best served: It is an excellent choice for pairing with fresh seafood, grilled vegetables, or light salads.
