Grape Variety: 100% Nero di Troia
Vineyards: In Apulia, specifically in northern Apulia, where the soil is primarily calcareous, rich in stone and rocks, with clay content. The vineyards utilise a pergola training system, hosting 1800-2000 vines per hectare, and benefit from a southwest exposure at elevations ranging from 30 to 120m above sea level.
Vinification: The harvested grapes are meticulously crushed under inert gas (CO2) to prevent oxygen exposure, followed by chilling to near freezing temperatures. Low-pressure pressing extracts the must, which is then fermented in stainless steel tanks at controlled temperature of 13°C. The wine, undergoes maturation in stainless steel, preserving its freshness.
