Vineyards:The vineyards benefit from excellent sun exposure and fertile red clay limestone soil, resulting in a fresh and flavorful wine with minerality. They use an espalier training system and are located at an elevation of 40-120 meters above sea level.
Vinification: Grapes are meticulously harvested and crushed under inert gas (CO2) to prevent oxygen exposure, then cooled to near-zero temperatures. Pressing occurs at low pressure, with the resulting must undergoing fermentation in stainless steel thanks at a controlled temperature of 10-12°C. approximately 15% of the must ferments in barriques, enhancing complexity.
