Salita is the top cuvée from Fattoria Castagnoli. It is selected from the oldest vines of the best terraced vineyards in Castagnoli. These terraces are planted in the traditional mixed culture with olive trees. The aim is not only to preserve the cultural heritage of Tuscany, but also to benefit from the synergy between these two crops.
As you would expect, Castagnoli's Super Tuscan also offers a unique blend of naturalness, freshness and complexity. Salita is also powerful, densely woven and displays the finest tannins. It refines its qualities over many years.

Salita is our truest and most unique representation of Sangiovese in Castagnoli. Olive trees grow together with the Salita alberello bush vines, like it has been traditionally done in Tuscany for centuries. At the highest elevation of Castagnoli at 450 meters above sea level, the vines produce fascinating complexity and character.
Sensory Features: High-toned aromatics including blood orange are on display, a medium-full bodied frame with smoked meat, black olive and rosemary to complement the red fruits, solid acidity and tannin. It is a unique style in Chianti born of a unique terroir, and it possesses a cool elegance that makes it immediately drinkable and very pleasurable though it will age well.
Grape Variety: 100% Sangiovese
Vinification:Grapes are picked by hand in small boxes. Alcoholic fermentation is spontaneous with natural yeasts in 1 ton vats. The extraction of color and tannins is facilitaed by punching down. Maceration of skins is occuring very delicately: Berries are falling from the destemmer directly into the vats without passing through a pump or tubes, hence remaining intact and crush solely due to the weight of berries themselves. Malolactic fermentation takes place in neutral barriques.
Maturation & Refinement: Aged for 24 months in French Oak Barriques and refined in bottle for a minimum of seven months before release.
