Sensory features:The wine has a beautiful, intense coppery colour, vibrant and brilliant. Similarly, the aromas and flavours are full of character and complexity, with intense notes of fruit preserved in alcohol, morello cherries and wild berries. The mouthfeel is compact and savoury. Offering a velvety textures, a powerful structure and a wonderful length. A great wine to discover.
Technical notes
Vinification: Harvested by hand in boxes. The harvest is done in several steps to try to pick the grapes in the best maturation. Soft crushing. 15 days of maceration in oak vats (this is the time when the wine acquires its particular coppery colour) and start the fermentation with indigenous yeasts. The wine is then aged 24 months in oak barrels of 225 liters. After the bottling the wine ages in the bottle about 6 months before to be release.
Best served: It is perfect with spider crabs, scampi or prawns, ideally steamed so that their sweet flavour complements the wine’s richness. It is particularly delicious with mantis shrimp, scallops and stewed cuttlefish, as well as with dry pasta and seafood risottos in general.
Serving temperature: 12 - 14°C.
