Sensory features: A pale pink colour with coppery highlights: this hue is the result of contact with the grape skins during the winemaking process. On the nose, it offers floral and fruity notes of apple, pear and wild berries. On the palate, it reveals sweet, creamy notes, with intense and persistent fruity flavours.

Grape variety: 100% Pinot Grigio
Vinification:Destemming, gentle crushing and immediate cooling to 7–8°C, followed by three days of maceration on the skins (and this is when the wine acquires its distinctive coppery hue). This is followed by racking and fermentation in stainless steel tanks.20% is aged in 1,500-litre oak barrels with battonage every 10 days; 80% is aged in steel tanks, with the lees stirred every 20 days. After 8 months, the two batches are blended and the wine is bottled.
Best served:It pairs beautifully with spider crabs, scampi or prawns, ideally steamed so that their sweet flavour complements the wine’s richness. It also comes into its own with mantis shrimp, scallops and stewed cuttlefish. Finally, we also recommend it with seafood pasta and risotto dishes in general.
