Sensory features: Deep purple red with violet-black reflections, intense and persistent aromas, with black currant and wild fruit scent, spicy with balsamic and vanilla notes. Full-bodied wine, soft and balanced, long and sapid in the end.

Best served : Excellent with savoury first courses, every kind of meat courses and mature cheese.

Technical notes
100% Negroamaro from the San Marzano, Salento, Puglia. At almost 100 meters above the sea level, with a high average temperature and very few rainfall during the year. The soils are mainly composed by clay, with an average depth which reaches up to 1 meter.

Harvest period: Second decade of September.

Vinification: Thermo-controlled maceration, followed by draining and soft pressing at the end of the alcoholic fermentation.

Maturation: In French oak barrels for 4 months

Serving temperature: About 16-18°C

Alcohol content: 14%

11 Filari Primitivo di Manduria Passito Dolce Naturale DOP

Sensory features: Intense ruby red, with garnet reflections. Persistent and complex to the nose with notes of mature fruits which recall cherry jam and dried figs. Slightly spicy, full-bodied giving the mouth a pleasant honeyed sensation, supported by a good acid structure. Meditation wine.

Best served: excellent with dried almond cakes, fruit tarts, savoury and mature cheeses

Technical Notes
100% Primitivo from very old selected vineyards in the towns of San Marzano and Sava. The soil is mainly „red earth‟, with a fine texture and generally a calcareous underground with some rock.

Harvest period: beginning of October

Vinification: grapes are hand-harvested, after withering on the plant.

Maceration: 10 days with selected autochthonous yeasts. Thermo-controlled alcoholic fermentation at 24-26°C.

Maturation: 12 months in Fine French and American Oak.
Serving temperature : 18°C

Alcohol content: 14%
